Cinnamyl alcohol (Cinnamol, CAS 104-54-1) is an organic compound with the molecular formula C9H10O. The trans type is colorless or yellowish long fine needle shaped crystal, while the cis type is colorless liquid, which has a sweet smell similar to hyacinth and ointment [1]. Soluble in ethanol, propylene glycol and most non-volatile oils, insoluble in water and petroleum ether, insoluble in glycerin and non-volatile oils [2]. It is mainly used to prepare essence of apricot, peach, raspberry, plum, cosmetics essence and soap essence. It is also used as an intermediate in organic synthesis.
