Potassium lactate CAS 996-31-6 is commonly used in meat and poultry products to extend shelf life and increase food safety as it has a broad antimicrobial action and is effective at inhibiting most spoilage and pathogenic bacteria. Potassium lactate is also used as an extinguishing medium in the First Alert Tundra fire extinguishers.
Potassium lactate solution is a transparent, colorless (or nearly colorless, odorless) (or a slight odor, unpleasant), viscous liquid, soluble in water, the solution concentration in the range of about 50% to 70%.
Applications
It can be used as emulsifier, flavor enhancer, auxiliary flavoring agent, humectant and pH value regulator.
